  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips (for cookie dough)
  • 1 cup chocolate chips (for topping)
  • 1 tsp coconut oil (for topping)

Instructions

  1. In a bowl, mix almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt until well combined.
  2. Line a plate with parchment paper and press the cookie dough mixture into an even layer about 1/2-inch thick.
  3. Melt the topping chocolate by microwaving chocolate chips with coconut oil in short bursts until smooth.
  4. Pour melted chocolate over the cookie dough layer and spread evenly. Optionally sprinkle with flaky sea salt.
  5. Chill in the freezer for about 10 minutes until set, then cut into chunks.
