- 1.5 lbs chicken breast, cut into bite-sized pieces
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 2 tablespoons honey (or brown sugar)
- 3 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 can (20 oz) pineapple chunks, drained
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 medium red onion, cut into wedges
- Fresh cilantro for garnish
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine chicken with soy sauce, olive oil, honey, garlic, ginger, salt, and pepper. Marinate for 10-15 minutes.
