  • 1 cup milk (2%, whole, or nonfat)
  • 1 tbsp vinegar (white or apple cider)
  • 1 large egg
  • 3 tbsp unsalted butter, melted
  • 2 cups plain white flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups sharp cheddar cheese, grated
  • 2 chopped green onions

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix dry ingredients: flour, baking powder, baking soda, and salt.
  3. In another bowl, combine wet ingredients: zucchini, milk, vinegar, egg, and melted butter. Whisk until smooth.
  4. Gradually fold the wet mixture into the dry ingredients until just combined.
  5. Fold in cheddar cheese and green onions.
  6. Pour batter into a greased loaf pan and smooth the top.
  7. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for 10 minutes before transferring to a wire rack to cool completely.
