  • ½ batch rough puff pastry or classic puff pastry (or store-bought)
  • 1 cup fig jam
  • ½ cup prepared caramelized onions, rough chopped
  • 4 ounces goat cheese
  • Fresh thyme (6-10 sprigs)
  • All-purpose flour (for work surface)
  • Egg wash (1 egg whisked with 1 teaspoon water)

Instructions

  1. Preheat your oven to 400ºF and line a baking sheet with parchment paper.
  2. Roll out your puff pastry on a floured surface until about ⅛-inch thick.
  3. Cut out at least 16 circles using a circle cutter. Dock each circle to prevent excessive puffing.
  4. Brush each round with egg wash and place caramelized onions in the center.
  5. Cut goat cheese into small pieces and add them atop the caramelized onions.
  6. Bake for about 12 minutes until puffy but not golden brown. Add fig jam and return to the oven for an additional 5-8 minutes until golden.
