  • 45 ripe peaches (peeled and diced)
  • 1/3 cup cane sugar
  • 2 tablespoons cornstarch or tapioca starch
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon orange juice
  • 1 1/4 cups gluten free flour blend
  • 1 cup gluten free quick oats
  • 1/4 cup brown sugar
  • 1/4 cup cane sugar
  • 1/2 teaspoon sea salt
  • 6 tablespoons coconut oil (solid)
  • 2 tablespoons coconut milk
  • 2 tablespoons pure maple syrup

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine peeled and diced peaches with cane sugar, cornstarch (or tapioca starch), ground cinnamon, and orange juice; let sit.
  3. In another bowl, mix gluten-free flour blend, quick oats, brown sugar, cane sugar, and sea salt. Add solid coconut oil, maple syrup, and coconut milk; blend until crumbly.
  4. Press two-thirds of the mixture into a greased baking pan. Pour peach mixture on top and sprinkle remaining crumble over it.
  5. Bake for 40-45 minutes until bubbly and golden brown. Allow to cool before slicing.
