Garlic Parmesan Duchess Potatoes are a delightful twist on traditional mashed potatoes, transforming simple ingredients into elegant, creamy domes that are perfect for any occasion. Ingredients

  • 1 large bulb of garlic
  • 1.3kg (2.8lb) baking potatoes
  • 75g (5 tbsp) butter (2 tbsp melted)
  • 2 tbsp heavy cream
  • 60g (3/4 cup) freshly grated Parmesan cheese
  • 4 large egg yolks
  • Salt and pepper to taste
  • Olive oil as needed

Instructions

  1. Preheat the oven to 180C (356F). Slice the garlic bulb's tip, drizzle with olive oil, wrap in foil, and roast for 50-60 minutes until soft.
  2. Peel and chop the baking potatoes; add to cold salted water. Boil until fork-tender.
  3. Drain potatoes and let them steam dry, then mash with butter and cream until smooth. Mix in roasted garlic, Parmesan, salt, and pepper.
  4. Transfer mixture to a piping bag fitted with a star tip. Pipe swirls onto a lined baking tray.
  5. Drizzle melted butter over each dome and bake at 200C (400F) for 15-20 minutes until golden brown.
  6. Serve hot with chopped parsley and extra Parmesan if desired.
