  • Pâte Sucrée dough (sweet shortcrust pastry)
  • 2 cups fresh strawberries, chopped
  • 1 tablespoon granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 6 fresh strawberries, halved

Instructions

  1. Prepare the tartlet shells by pressing Pâte Sucrée dough into individual tartlet pans. Freeze for 15 to 30 minutes.
  2. Bake the shells at 375°F for about 10 to 15 minutes until golden. Cool completely before removing from pans.
  3. In a saucepan, combine chopped strawberries and sugar over medium heat; simmer for about 25 minutes until thickened to make strawberry jam.
  4. For the pastry cream, heat sweetened condensed milk, whole milk, and heavy cream until simmering. Whisk egg yolks and cornstarch together, then temper and mix back into the saucepan until thickened.
  5. Assemble by spreading strawberry jam on each tartlet shell, piping in pastry cream, and garnishing with halved strawberries.
