  • 1 cup sour cream
  • 1 cup mayonnaise
  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt and black pepper, to taste
  • ¼ cup chopped green onions (optional)
  • ½ cup diced red bell pepper (optional)
  • 1 jalapeño, finely chopped (optional)
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Prepare the corn by cutting kernels off fresh cobs or draining canned/frozen corn.
  2. In a large bowl, mix together sour cream, mayonnaise, and softened cream cheese until smooth.
  3. Fold in both cheeses along with garlic powder, onion powder, smoked paprika, chili powder, salt, and pepper.
  4. Gently add the prepared corn and any optional ingredients.
  5. For serving cold: Cover and chill for at least 30 minutes. For hot dip: Preheat oven to 375°F (190°C), transfer to a baking dish, top with extra cheese, and bake for 20–25 minutes until bubbly.
