  • 1 (14-16 pound) whole turkey
  • Salt & pepper (to taste)
  • 1 cup softened unsalted butter
  • 1 tablespoon fresh sage (chopped finely)
  • 1 tablespoon fresh thyme (chopped finely)
  • 1 tablespoon fresh rosemary (chopped finely)
  • 4 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper (or to taste)
  • 1 lemon (halved)
  • A few sprigs each fresh sage, thyme, and rosemary
  • 1 head garlic (break into cloves and peel them)

Instructions

  1. Allow the turkey to sit at room temperature for about an hour.
  2. In a bowl, mix softened butter with fresh herbs and minced garlic.
  3. Preheat oven to 450°F; adjust rack to the bottom third.
  4. Remove giblets from turkey and pat dry; season inside and out with salt and pepper.
  5. Stuff turkey with lemon halves, fresh herbs, and garlic cloves.
  6. Rub herb butter all over the skin of the turkey.
  7. Place on a roasting rack and roast at 350°F for approximately 13 minutes per pound.
  8. Check doneness with a thermometer; it should reach 165°F in the thigh.
  9. Let rest for at least 20 minutes before carving.
