  • 8 oz dry rotini pasta
  • 9 oz hard turkey slices, chopped
  • 6.5 oz turkey pepperoni, chopped
  • 1 cup canned artichoke hearts, drained & quartered
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted & halved
  • ½ cup pepperoncini, sliced
  • 8 oz mozzarella pearls
  • ¼ cup red onion, thinly sliced
  • ⅓ cup fresh basil, sliced
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 garlic cloves, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook the rotini according to package instructions until al dente. Drain and let cool.
  2. In a small bowl or jar, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and pepper to create the vinaigrette.
  3. Chop turkey slices and turkey pepperoni into bite-sized pieces. Halve the cherry tomatoes and slice the olives and red onion.
  4. In a large mixing bowl, combine cooled pasta with all the prepared ingredients. Pour the vinaigrette over the salad and toss well.
  5. Chill in the refrigerator for at least 30 minutes before serving for enhanced flavor.
