  • 1 cup warm water (110°F/43°C)
  • 1 tablespoon honey (or sugar)
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup extra virgin olive oil (plus more for drizzling)
  • 2 tablespoons fresh rosemary (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon flaky sea salt

Instructions

  1. Activate the yeast by dissolving it with the honey in warm water. Allow it to sit for about 5 minutes until foamy.
  2. In a large bowl, combine the flour, salt, and olive oil with the yeast mixture to form a sticky dough. Cover and let rise in a warm place for 45–60 minutes until doubled.
  3. Preheat your oven to 375°F (190°C) and grease a muffin tin with olive oil.
  4. Spoon the risen dough into muffin cups, filling each about three-quarters full.
  5. Drizzle olive oil over each muffin and sprinkle with chopped rosemary, minced garlic, and flaky sea salt.
  6. Bake for 18–20 minutes until golden brown and crisp around the edges.
  7. Cool slightly before transferring to a wire rack.
