  • ÂĽ cup double cream
  • 3 ½ oz unsalted ground pistachios
  • Pinch of salt
  • 3 ½ oz kataifi pastry (chopped and separated)
  • 1 tbsp butter
  • 9 oz milk chocolate (finely chopped)
  • Âľ cup all-purpose flour
  • â…” cup cornstarch
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tbsp vegetable oil
  • 1 cup water

Instructions

  1. Prepare kataifi pastry by whisking together flour, cornstarch, sugar, and salt in a bowl.
  2. Add vegetable oil and water; mix until smooth. Let rest for 30 minutes.
  3. Pipe thin strands onto a heated nonstick pan and cook until set. Toast some strands in butter until golden brown.
  4. For the filling, melt white chocolate with double cream, then blend in ground pistachios and salt.
  5. Mix toasted kataifi with pistachio filling; chill until firm.
  6. Roll the mixture into balls and coat each in melted milk chocolate; garnish with chopped pistachios.
  7. Refrigerate until set before serving.
