  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 cup almond milk (or any plant-based milk)
  • 1 teaspoon vanilla extract
  • For the Cinnamon Swirl: 1/4 cup brown sugar and 1 tablespoon ground cinnamon

Instructions

  1. 1. Preheat your oven to 350°F (175°C). In a large bowl, whisk together the flour, granulated sugar, baking powder, ground cinnamon, and salt.
  2. 2. In another bowl, mix the vegetable oil, almond milk, and vanilla extract until well combined. Pour this into the dry ingredients and stir gently until just incorporated.
  3. 3. In a small bowl, combine brown sugar and ground cinnamon for the swirl.
  4. 4. Pour half of the batter into a greased loaf pan. Sprinkle half of the cinnamon swirl mixture on top before adding the remaining batter. Finish by sprinkling the rest of the swirl mixture on top and gently swirl through with a knife.
  5. 5. Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow cooling for about 10 minutes before transferring to a wire rack.
