  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature) or egg substitute
  • 1 tsp vanilla extract
  • 2 & 1/3 cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter
  • 2/3 cup brown sugar
  • 1 & 1/4 cup chopped pecans
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until fluffy. Add the egg and vanilla extract; mix well.
  3. Sift in flour, salt, and baking powder; mix until just combined.
  4. Scoop out cookie dough onto a baking sheet, flattening each ball slightly and creating an indent in the center.
  5. Bake for 8-9 minutes until lightly golden around the edges. Let cool before adding pecan filling.
