  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a round baking dish.
  2. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, chopped thyme, salt, and pepper.
  3. Layer half of the sliced potatoes in the baking dish, drizzle half of the balsamic mixture over them.
  4. Add the remaining potato slices on top and pour the rest of the balsamic mixture.
  5. Cover with foil and bake for 45 minutes; then uncover and bake for an additional 15-20 minutes until golden brown.
  6. Allow to cool slightly before slicing and serving.
