  • 2 sheets of thawed puff pastry
  • ⅔ cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups warm whole milk
  • 6 large egg yolks
  • 1 vanilla bean (or 2 tsp vanilla bean paste)
  • 4 Tbsp cold unsalted butter
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C). Line baking trays with parchment paper and roll out puff pastry sheets to about 9×9 inches. Prick with a fork and weigh down before baking for 35-45 minutes until golden.
  2. In a saucepan, whisk together sugar, cornstarch, and salt. Mix in egg yolks until combined.
  3. Warm milk in another saucepan until steaming. Gradually add to the egg mixture while whisking continuously.
  4. Return mixture to heat and cook over medium heat until thickened (about 5-7 minutes). Stir in vanilla seeds and cold butter.
  5. Assemble by layering one piece of baked pastry in an 8×8 pan, pouring custard over it, topping with another pastry piece, then chilling for at least four hours or overnight.
  6. When ready to serve, dust with powdered sugar and cut into squares.
