  • 1 pound ground turkey or chicken sausage
  • 4 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups baby spinach
  • Salt and pepper to taste
  • Fresh basil leaves (torn) for garnish

Instructions

  1. Cook the penne pasta in salted boiling water until al dente; reserve a cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium-high heat and brown the ground turkey or chicken sausage for about 5-7 minutes. Set aside.
  3. Lower heat and sauté minced garlic until fragrant, then add sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes; simmer for 3-5 minutes.
  4. Stir in heavy cream and let simmer until thickened.
  5. Add grated Parmesan cheese, cooked sausage, and spinach; cook until spinach wilts.
  6. Toss the drained penne with the creamy sauce; adjust thickness with reserved pasta water if needed.
  7. Serve hot, garnished with torn basil leaves.
