  • 1/2 cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F and grease a medium-sized baking dish.
  2. Slice the Yukon gold potatoes thinly using a mandolin or sharp knife.
  3. In a large pot on medium heat, melt the butter and sauté the garlic until fragrant. Add the flour to create a roux, cooking for 1-2 minutes.
  4. Slowly stir in the heavy cream until thickened; then mix in Parmesan cheese, thyme, salt, and pepper until smooth.
