  • 2 Tbsp avocado oil (divided)
  • 1 cup yellow onion, chopped
  • 5 large cloves garlic, minced
  • 1 jar (16 oz) roasted red peppers, drained
  • 1 can (15 oz) full-fat coconut milk
  • Sea salt and spices (to taste)

Instructions

  1. Heat 1 tablespoon of avocado oil in a medium skillet over medium heat. Sauté onions until translucent, about 5 minutes, then add garlic and cook for an additional minute.
