  • 34 medium whole carrots (peeled and chopped)
  • 12 stalks celery (chopped)
  • 1/2 medium yellow or white onion (chopped)
  • 4 cups low-sodium chicken stock
  • 1 cup cream or half-and-half
  • 1 pound potato gnocchi
  • 3 cups baby spinach
  • 2 Tablespoons fresh parsley (flat or curly, chopped)
  • 45 cloves garlic (minced)
  • 1 Tablespoon Italian seasoning
  • salt and black pepper
  • 1 teaspoon Better than Bouillon chicken seasoning base (optional)
  • pinch red pepper flakes (optional)
  • 12 Tablespoons cornstarch

Instructions

  1. Chop carrots, celery, onion, and garlic.
  2. Place chicken, vegetables, parsley, garlic, Italian seasoning, salt, and pepper in the slow cooker.
  3. Pour in chicken stock. Stir gently to combine.
  4. Cover and cook on low for 6–8 hours or high for about 4 hours.
  5. Shred the chicken when cooked through.
  6. Whisk cream with cornstarch; add to soup along with gnocchi and spinach.
  7. Cook on high for an additional 30–45 minutes until gnocchi are tender.
  8. Adjust seasoning and serve warm.
