Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 12 oz penne or fettuccine pasta
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Cook pasta according to package instructions until al dente. Reserve some pasta water before draining.
  2. Heat olive oil in a skillet over medium-high heat. Season chicken with salt, pepper, and Cajun seasoning. Sear until golden brown and cooked through, about 5-7 minutes per side.
  3. Remove chicken; melt butter in the same skillet and sauté garlic until fragrant. Stir in additional Cajun seasoning and smoked paprika.
  4. Add heavy cream and chicken broth; simmer until slightly thickened.
  5. Slice the chicken and return to skillet along with drained pasta. Toss to combine, adding reserved pasta water if needed for desired consistency.
  6. Stir in Parmesan cheese until melted. Serve hot.
