  • 1 large egg (for filling)
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a loaf pan.
  2. In a large bowl, whisk together pumpkin puree, sugars, coconut oil, sour cream, egg, vanilla extract, and spices until blended. Gradually fold in flour and leavening agents; do not overmix.
