  • 4 medium-sized sweet potatoes
  • 1 cup fresh cranberries (or frozen)
  • 2 medium apples (Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and poke holes in them with a fork. Place on a baking sheet lined with foil and bake for 45 minutes to an hour until tender.
  2. Once baked, let cool slightly. Slice in half lengthwise and scoop out most flesh into a mixing bowl.
  3. Add cranberries, chopped apples, brown sugar, cinnamon, butter, and salt to the bowl. Mix until all ingredients are well combined.
  4. Spoon the mixture back into the sweet potato skins evenly and return to the oven at 350°F (175°C) for another 20-25 minutes until heated through.
