  • 1 cup softened butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup old-fashioned oats
  • 1 cup corn flakes
  • 1 cup chopped pecans (toasted)
  • 1/2 cup coconut flakes
  • 6 oz peanut butter chips
  • 6 oz semi-sweet chocolate chips

Instructions

  1. Toast pecans in a dry skillet over medium heat for 3–5 minutes until fragrant; let cool.
  2. In a large bowl, cream softened butter until light and fluffy.
  3. Add white and brown sugars to the butter and mix well.
  4. Beat in eggs one at a time along with vanilla extract until combined.
  5. In another bowl, mix flour, salt, baking powder, and baking soda; blend into wet mixture without overmixing.
  6. Fold in oats, corn flakes, toasted pecans, coconut flakes, peanut butter chips, and chocolate chips until evenly distributed.
  7. Chill dough for at least one hour.
  8. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  9. Scoop dough into generous balls on the prepared sheets about two inches apart.
  10. Bake for 12–14 minutes until edges are golden but centers are still shiny; cool before serving.
