- 1 cup white sugar
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup old-fashioned oats
- 1 cup corn flakes
- 1 cup chopped pecans (toasted)
- 1/2 cup coconut flakes
- 6 oz peanut butter chips
- 6 oz semi-sweet chocolate chips
- Toast pecans in a dry skillet over medium heat for 3–5 minutes until fragrant; let cool.
- In a large bowl, cream softened butter until light and fluffy.
- Add white and brown sugars to the butter and mix well.
- Beat in eggs one at a time along with vanilla extract until combined.
- In another bowl, mix flour, salt, baking powder, and baking soda; blend into wet mixture without overmixing.
- Fold in oats, corn flakes, toasted pecans, coconut flakes, peanut butter chips, and chocolate chips until evenly distributed.
- Chill dough for at least one hour.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop dough into generous balls on the prepared sheets about two inches apart.
- Bake for 12–14 minutes until edges are golden but centers are still shiny; cool before serving.
