  • 15.5 oz. black beans, drained and rinsed
  • 15.5 oz. black-eyed peas, drained and rinsed
  • 15 oz. sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced
  • 1 tsp. chili powder
  • ½ tsp. kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple vinegar
  • 1 tbsp. fresh lime juice
  • ¼ tsp. garlic powder

Instructions

  1. Drain and rinse the black beans, black-eyed peas, and sweet corn; pat dry.
  2. In a large bowl, combine beans and corn with chopped cilantro, diced peppers, and red onion.
  3. In another bowl, whisk together chili powder, kosher salt, sugar, olive oil, white apple vinegar, lime juice, and garlic powder until smooth.
  4. Pour dressing over the bean mixture and stir gently to combine.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
