  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed
  • 2 (3.4 oz) boxes instant coconut cream pudding mix
  • 3 cups half-and-half

Instructions

  1. For the crust, mix graham cracker crumbs and sugar in a bowl. Stir in melted butter until well combined. Press firmly into the bottom of a greased 9×13 inch dish.
  2. In another bowl, beat softened cream cheese and powdered sugar until smooth. Mix in coconut extract and fold in 8 oz of Cool Whip. Spread over the prepared crust.
  3. Whisk together instant coconut cream pudding mix and half-and-half until thickened. Spread over the cream cheese layer.
  4. Top with remaining Cool Whip and sprinkle with toasted shredded coconut. Refrigerate for at least six hours before serving.
