  • 1 packet (85 grams) raspberry jelly
  • 420 grams (approximately 6 cups) store-bought sponge rolls
  • 4 tablespoons cranberry juice
  • 500 grams (approximately 4 cups) fresh strawberries, raspberries, and blueberries
  • 480 ml (2 cups) store-bought custard or homemade custard
  • 360 ml (1 and 1/2 cups) whipped cream

Instructions

  1. Prepare the raspberry jelly according to package instructions and set it in a small baking tin.
  2. While the jelly sets, chop strawberries and mix them with raspberries and blueberries. Slice sponge cake into half-inch slices.
  3. In a trifle bowl, layer half of the sponge cake slices at the bottom and drizzle with cranberry juice.
  4. Add one-third of the mixed berries and half of the jelly squares, followed by one cup of custard.
  5. Repeat the layering process with remaining ingredients.
  6. Top with leftover fruit for decoration and cover with plastic wrap; chill for at least 4-6 hours or overnight.
  7. Serve chilled with a generous dollop of whipped cream on top.
