  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar, packed
  • 11/2 teaspoons ground cinnamon
  • 1 large apple, peeled and chopped
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • 3/4 cups confectioners’ sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons water

Instructions

  1. Preheat oven to 350°F. Grease and flour a loaf pan.
  2. In a bowl, whisk flour, baking powder, and salt.
  3. Cream together butter and sugar until smooth; add vanilla.
  4. Beat in eggs one at a time. Alternate adding dry ingredients with milk until combined.
  5. Mix brown sugar, cinnamon, and apples in another bowl.
  6. Layer half the batter in the pan, followed by half the apple mixture; swirl gently.
  7. Add remaining batter and apple mixture on top; sprinkle cinnamon topping.
  8. Bake for 45-55 minutes until a toothpick comes out clean.
  9. Allow cooling before glazing with a mixture of confectioners’ sugar, cinnamon, and water.
