  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, cold and cubed
  • 100g dark chocolate (at least 60%), chopped
  • 1 cup shelled unsalted pistachios
  • 1/2 cup heavy cream (divided)
  • 1 tablespoon cornstarch
  • Granulated sugar

Instructions

  1. Make the Tart Shell: Mix flour, cocoa powder, powdered sugar, and salt in a bowl. Cut in cold butter until crumbly. Add egg yolk and milk as needed to form dough. Chill.
  2. Blind Bake: Roll out dough into a tart pan, prick with a fork, and bake at 350°F (175°C) for about 25 minutes. Cool completely.
  3. Prepare Bottom Ganache: Heat heavy cream until simmering, pour over chopped chocolate; stir until smooth. Pour into cooled tart shell and chill until set.
  4. Make Pistachio Cream: Blend pistachios with milk until smooth; combine with heavy cream, sugar, and cornstarch in a saucepan. Cook until thickened; fold in roasted pistachios.
  5. Assemble Layers: Spread pistachio cream over set ganache layer.
  6. Top Ganache: Repeat heating process with remaining cream and chocolate; pour over pistachio layer and chill to set.
  7. Garnish: Decorate with chopped or whole roasted pistachios before serving.
