  • ½ cup Dutch-processed cocoa powder
  • 1½ teaspoons baking powder
  • 1½ teaspoons baking soda

  • ½ cup whole milk
  • 2 large eggs
  • ½ cup sour cream
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 1 cup hot water
  • 4 large egg yolks
  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 2 cups heavy cream, divided
  • 3.5 oz dark chocolate, chopped
  • 4.5 oz white chocolate, chopped
  • 5 oz milk chocolate, chopped
  • ⅓ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (180°C). In a bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  2. In another bowl, whisk wet ingredients: eggs, milk, sour cream, oil, and vanilla until smooth. Gradually stir in hot water with dissolved espresso powder.
  3. Combine both mixtures until smooth to create the batter. Pour evenly into two prepared round pans and bake for about 35 minutes or until a toothpick comes out clean.
  4. For the mousse: heat cream with vanilla until steaming. Whisk egg yolks with sugar and cornstarch; gradually mix in hot cream until thickened.
  5. Divide custard into two bowls; stir in dark chocolate in one and white chocolate in the other until melted.
  6. Fold whipped cream into each bowl until combined.
  7. Assemble by layering one cake layer with dark mousse followed by white mousse; repeat with the second layer on top. Chill for at least four hours.
  8. For the ganache: heat cream until steaming; pour over chopped milk chocolate and stir until smooth.
  9. Cover the chilled cake with ganache before serving.
