  • ½ tsp espresso powder
  • ½ cup olive oil
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup ripe bananas (mashed)
  • ½ cup dark chocolate chips
  • ½ cup semi-sweet chocolate chips
  • 1 tbsp all-purpose flour (for dusting chocolate chips)
  • ¼ banana (for topping)
  • 1 tsp granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, salt, and espresso powder.
  3. In another bowl, mix olive oil, brown sugar, granulated sugar, eggs, vanilla extract, sour cream, and mashed bananas until well combined.
  4. Pour the wet mixture into dry ingredients and gently fold until just combined.
  5. Toss chocolate chips in a tablespoon of flour and fold into the batter.
  6. Transfer the batter to the prepared loaf pan and top with banana slices and extra chocolate chips if desired.
  7. Bake for approximately 55 minutes or until a toothpick inserted comes out clean.
  8. Let cool for about 10 minutes before transferring to a wire rack.
