  • 1/2 cup vanilla protein powder (whey, casein, or plant-based)
  • 1/4 cup cashew butter (or almond/sunflower seed butter)
  • 23 tbsp milk (dairy or non-dairy)
  • 1/4 cup mini chocolate chips (plus extra for topping)
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a medium bowl, whisk together almond flour, protein powder, and salt.
  2. In another bowl, mix cashew butter, 2 tablespoons of milk, honey (or maple syrup), and vanilla until smooth.
  3. Combine the wet mixture into the dry ingredients, mixing well until fully combined.
  4. Fold in mini chocolate chips evenly throughout the dough.
  5. If too dry, add more milk until it reaches a slightly sticky consistency.
  6. Roll the mixture into 1-inch balls and place on a parchment-lined plate.
  7. Chill in the fridge for at least 30 minutes to firm up.
  8. Melt chocolate chips with coconut oil in intervals until smooth.
  9. Dip each protein ball in melted chocolate and sprinkle with additional mini chocolate chips while warm.
  10. Refrigerate again for about 15-20 minutes until set.
