  • 1 pound boneless skinless chicken breast or thighs
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and squeezed to remove excess water
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups cooked rice, quinoa, or cauliflower rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup crumbled feta cheese
  • Fresh parsley or dill, for garnish

Instructions

  1. In a mixing bowl, combine olive oil, lemon juice, oregano, minced garlic, smoked paprika, salt, and pepper. Add the chicken and coat it well. Cover and refrigerate for at least 15 minutes.
  2. Heat a skillet over medium heat with a drizzle of olive oil. Cook the marinated chicken until golden brown on each side (about 6-7 minutes). Let the chicken rest for about 5 minutes before slicing into strips.
  3. In a bowl, mix Greek yogurt with grated cucumber, olive oil, lemon juice, minced garlic, dill, salt, and pepper. Stir until everything is nicely combined.
  4. Assemble the bowls by adding a scoop of rice to each bowl. Arrange sliced chicken alongside cherry tomatoes, cucumbers, red onions, olives, and feta cheese atop the base. Drizzle tzatziki sauce over everything or serve it on the side.
