  • 2 slices of sourdough or artisan bread
  • 1/2 ripe avocado, mashed
  • 1/2 cup cooked shredded chicken (grilled or rotisserie)
  • 2 slices of cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise or aioli (optional)
  • 1 tsp lemon juice
  • 1 tbsp butter (for toasting)
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mash the avocado with lemon juice, salt, and pepper.
  2. Spread mayonnaise on one side of each slice of bread. On one slice, spread the avocado mixture, then layer the shredded chicken and cheese.
  3. Top with the second slice of bread (mayo side facing out).
  4. Melt butter in a skillet over medium heat. Grill the sandwich for 3–4 minutes per side until golden brown and cheese is melted.
  5. Remove from heat, slice in half, and serve hot.
