  • 2 cups cherries, pitted and chopped
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3½ cups powdered sugar
  • 1 tsp vanilla extract
  • ¼ cup cherry juice or puréed cherries

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare three 8-inch round cake pans by greasing and lining them with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy (3–5 minutes).
