  • 1 cup heavy cream
  • 1/2 cup cherry juice
  • 1 cup fresh cherries, pitted and chopped
  • 1/4 cup granulated sugar
  • 2 tablespoons cherry preserves
  • 1 teaspoon vanilla extract
  • 1 package ladyfingers

Instructions

  1. In a large mixing bowl, beat mascarpone cheese and heavy cream until smooth and fluffy.
  2. Add cherry juice and vanilla extract; mix until well combined.
  3. In another bowl, combine granulated sugar and cherry preserves; then mix into the mascarpone mixture along with chopped cherries.
  4. Quickly dip ladyfingers in cherry juice to moisten them without soaking.
  5. Layer dipped ladyfingers in a dish, then spread half of the mascarpone mixture over them.
  6. Repeat with another layer of ladyfingers followed by the remaining mascarpone mixture.
  7. Cover and refrigerate for at least 4 hours or overnight before serving.
