  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips, melted
  • 1 cup chopped Reese’s peanut butter cups

Instructions

  1. Cream together the softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time and mix well after each addition. Stir in vanilla extract.
  2. In another bowl, whisk flour, baking soda, and salt together. Gradually combine with wet ingredients. Cover and chill dough for 1 hour.
  3. For the filling, beat cream cheese until smooth, then add sugar, egg, and vanilla extract—mix until creamy.
  4. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop chilled dough into disks, place cheesecake filling in center, fold edges up and seal.
  5. Bake for 10–12 minutes until edges are golden but centers are soft. Cool slightly before transferring to wire racks.
  6. Drizzle melted white chocolate over cookies and top with chopped Reese’s while still warm.
