  • 5 1/2 tbsp butter
  • 1 1/3 cups chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 3 cups low-sodium chicken broth
  • 3 1/2 cups peeled and cubed russet potatoes
  • 3 cups chopped broccoli florets
  • 6 tbsp all-purpose flour
  • 3 cups milk (preferably 1% or 2%)
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. In a large pot, melt half of the butter over medium heat. Add carrots, celery, and onion; sauté for about 3-4 minutes.
  2. Stir in minced garlic and cook for an additional 30 seconds.
  3. Pour in chicken broth, add cubed potatoes, thyme, salt, and pepper. Bring to a boil then reduce heat and simmer covered for about 15 minutes until potatoes are tender.
  4. Add broccoli florets and cook for another 5 minutes.
  5. In a separate saucepan, melt remaining butter over medium heat. Whisk in flour to form a roux and cook for one minute.
  6. Gradually add milk while whisking until thickened.
  7. Combine the creamy mixture with the soup pot and stir in shredded cheeses until melted.
