  • 10 oz rigatoni pasta
  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese

  • 2 tbsp butter (divided)
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Optional: 1/2 cup shredded mozzarella or Fontina cheese

Instructions

  1. Season steak tips with Cajun seasoning. In a skillet, heat olive oil and 1 tbsp butter over medium-high heat. Sear steak until browned on all sides; remove and set aside.
  2. Cook rigatoni in salted boiling water until al dente (10-12 minutes). Reserve 1/2 cup pasta water before draining.
  3. In the same skillet, melt remaining butter and sauté garlic until fragrant. Add heavy cream and simmer gently.
  4. Stir in Parmesan cheese until melted, adding mozzarella if desired. Season with salt, black pepper, and more Cajun seasoning as needed.
  5. Combine cooked rigatoni and reserved pasta water into the sauce, then fold in seared steak tips until coated.
