  • 2 chicken breasts, cubed
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add cubed chicken and Cajun seasoning; cook until browned (5–7 minutes).
  4. Remove chicken; sauté onion, bell pepper, and garlic in the same skillet for about 3–4 minutes.
  5. Stir in cream cheese until melted; add heavy cream and chicken broth while continuously stirring. Mix in cheddar cheese, Parmesan, paprika, salt, and pepper until smooth.
  6. Return the chicken and pasta to the skillet; mix well.
  7. Transfer the mixture to a greased baking dish and bake for 20–25 minutes until golden brown on top.
