  • 2/3 cup vegetable oil
  • 1 cup sour cream
  • 3 large eggs
  • 3/4 cup cocoa powder
  • 300g dark chocolate (for frosting)
  • 8 oz cream cheese

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, sugars, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine eggs, vegetable oil, buttermilk mixture (milk + vinegar), sour cream, and instant coffee until smooth.
  4. Gradually mix the wet ingredients into the dry ingredients along with boiling water until just combined.
  5. Pour batter into greased round cake pans and bake for about 30 minutes or until a toothpick comes out clean.
  6. For frosting: Melt dark chocolate with corn syrup; beat cream cheese until creamy and gradually add cocoa powder and powdered sugar followed by chilled heavy cream.
  7. Once cakes are cool, layer them with frosting in between and cover the entire cake with remaining frosting.
