  • 3 oz cooking oil
  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cups chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large mixing bowl, combine the cooking oil, eggs, sugar, vanilla extract, and pumpkin puree until smooth. Stir in one cup of chocolate chips.
  4. Gradually add the dry ingredients to the wet mixture and stir until just blended.
  5. Grease an 8" x 4" loaf pan with oil spray and pour in the batter. Sprinkle the remaining chocolate chips on top.
  6. Bake for about 50-60 minutes or until a toothpick inserted into the center comes out clean. Let cool before slicing.
