  • 1 lb ground beef
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 3 cups low-sodium beef broth
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp butter
  • Fresh parsley (optional)

Instructions

  1. In a large skillet over medium heat, melt 1 tablespoon of butter and sauté the diced onion until translucent (about 3–4 minutes).
  2. Add the ground beef and cook until no longer pink, draining any excess fat.
  3. Stir in the minced garlic and cook until fragrant (about 1 minute).
  4. Combine the uncooked rice with beef broth, Italian seasoning, salt, and pepper; stir well.
  5. Bring to a boil, then reduce heat to low and cover. Simmer for about 18–20 minutes until rice is tender.
  6. In a small saucepan over low heat, melt remaining butter and combine with milk, cheddar cheese, and Parmesan until creamy.
  7. Pour the cheese sauce into the skillet with the beef and rice mixture; stir until fully combined.
  8. Cook uncovered for an additional couple of minutes to meld flavors together. Garnish with fresh parsley if desired.
