  • 8 eggroll wrappers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • 1/2 teaspoon garlic powder
  • Vegetable oil for frying

Instructions

  1. In a bowl, mix cream cheese, cheddar cheese, jalapeños, green onion, garlic powder, salt, and pepper until well combined.
  2. Place an eggroll wrapper on a clean surface. Add about 2 tablespoons of filling diagonally across the center. Fold the bottom over the filling, tuck in the sides, and roll tightly. Seal edges with water.
  3. Heat vegetable oil in a skillet to 350°F (175°C). Fry the eggrolls seam side down until golden brown (about 3-4 minutes), flipping occasionally.
  4. Drain on paper towels and serve hot with your favorite dipping sauce.
