  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups unsalted butter, cold and cubed
  • 1 large egg, lightly beaten
  • 2 cups dried apricots, chopped
  • 1 1/2 cups water
  • 2 tablespoons fresh lemon juice

Instructions

  1. In a saucepan, combine the dried apricots, water, and sugar. Simmer over medium heat for about 15-20 minutes until tender. Stir in lemon juice and let cool.
  2. Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking pan.
  3. In a bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter until crumbly.
  4. Reserve some dough for topping. Press the remaining dough into the pan evenly.
  5. Spread the cooled apricot mixture over the crust and crumble the reserved dough on top.
  6. Bake for 30-35 minutes until golden brown. Cool completely before cutting.
