  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled and sliced)
  • 690 g cream cheese (softened)
  • 100 g Greek yogurt
  • 3 large eggs
  • 55 g unsalted butter (melted)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 50 g brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 75 g granulated sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 325°F (160°C). Crush the biscoff cookies and mix with melted butter. Press into the bottom of a springform pan.
  2. For the streusel topping, combine melted butter, flour, brown sugar, and oats until crumbly. Set aside.
  3. Toss sliced apples with brown sugar and cinnamon; spread over the crust.
  4. Beat cream cheese and sugar until smooth; mix in Greek yogurt, eggs, and spices. Pour over apple layer.
  5. Top with streusel and bake for about 85 minutes until set but slightly jiggly in the center.
  6. Let cool gradually before refrigerating for at least 4 hours before serving.
