  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)

Instructions

  1. Preheat oven to 350°F (180°C). Prepare a 9-inch springform pan by wrapping it in foil and greasing it lightly.
  2. Mix graham cracker crumbs, brown sugar, and cinnamon in a bowl. Combine with melted butter and press into the bottom of the pan.
  3. Peel and slice apples; toss with brown sugar and cinnamon.
  4. For the crumble topping, mix flour, brown sugar, cinnamon, oats, and melted butter until crumbly.
  5. In a mixer, beat cream cheese until smooth; gradually add sugars. Incorporate cinnamon, cornstarch or flour, vanilla extract, sour cream, and eggs one at a time.
  6. Layer half the cheesecake filling in the crust followed by half the apples and crumble topping; repeat layers.
  7. Place in a water bath and bake for about 55 minutes or until slightly jiggly in the center.
  8. Allow to cool gradually in the oven before refrigerating for at least four hours.
