  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • Tangzhong
  • 6 tablespoons unsalted butter (room temperature)
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 2 teaspoons ground cinnamon
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream
  • 2 tablespoons apple butter

Instructions

  1. For the filling, combine diced apples, apple butter, sugar, water, lemon juice, cinnamon, vanilla extract, sea salt, and cornstarch in a bowl. Mix gently and let sit.
  2. To make the dough, mix water and bread flour to create tangzhong. In a large bowl, combine remaining bread flour, sugar, yeast, salt, milk, cream, egg, vanilla extract, and tangzhong mixture. Knead until smooth.
  3. Place dough in a greased bowl and let rise until doubled in size (about an hour).
  4. Roll out the dough into a rectangle. Spread softened butter over it and sprinkle with brown sugar and cinnamon before adding apple filling. Roll tightly into a log.
  5. Cut into slices and place them in a greased baking dish for a second rise (about another hour).
  6. Preheat oven to 350°F (175°C) and bake for about 30 minutes until golden brown.
  7. Prepare frosting by mixing cream cheese with powdered sugar and heavy cream until smooth.
  8. Drizzle frosting over cooled rolls before serving.
