  • 34 lbs turkey breast (bone-in or boneless)
  • 2 cups apple cider
  • 4 tbsp butter
  • 1/4 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 cloves garlic (minced)
  • 1/2 tsp cinnamon
  • Optional: Fresh herbs (rosemary or thyme), sliced apples

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the turkey breast dry and season generously with salt and pepper.
  2. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Sear the turkey on all sides until golden brown (about 3-4 minutes per side).
  3. Place the seared turkey in a roasting pan and add 1 cup of apple cider to keep it moist during cooking.
  4. For the glaze, combine the remaining apple cider, brown sugar, apple cider vinegar, Dijon mustard, minced garlic, cinnamon, and optional cloves in a saucepan. Simmer until syrupy (10-15 minutes).
  5. Brush the turkey with the glaze and roast for about 1.5 to 2 hours, basting every 15 minutes until the internal temperature reaches 165°F (74°C).
  6. Let rest for 10-15 minutes before carving and garnish with fresh herbs and sliced apples.
