  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F. Grease a 9” square baking dish and line with parchment paper.
  2. In a pan, boil the apple cider until reduced by half (about 5 minutes). Add cold butter and whisk until melted.
  3. In a bowl, whisk together eggs, granulated sugar, brown sugar, oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt until smooth.
  4. Whisk in the reduced apple cider. Gently fold in the flour until just combined.
  5. Pour the batter into the prepared dish and bake for 22-25 minutes until golden brown.
  6. Allow to cool slightly before topping with melted butter and sprinkling cinnamon sugar over it.
